The millet flour experiments continue!! Last week, I tried my hand at making pizza. I used a head of cauliflower and new fave flour - millet. I loved the color, texture and taste of the pizza crust. It definitely had a strong veggie taste that even the spices and flour couldn't mute it out. But it was delicious. And that's saying something given that cauliflower is my least favorite vegetable.
You'll need
- 1 medium-sized head of cauliflower, cut into small florets
- 1.5 tsp baking powder
- 1/4 cup water
- 1/3 cup millet flour
- 1 each oregano and thyme
- 1/2 tsp each garlic powder and salt
How-to
- Steam cauliflower florets until they're soft
- While the cauliflower is cooking, mix the dry ingredients together in a bowl
- Drain the cauliflower and cool to touch
- Place a well-oiled 9 inch cast iron pan into the oven and pre-heat to 400 degrees F
- Put the cauliflower into a dish tow and squeeze out as much moisture as possible
- Add the cauliflower to the bowl with the dry ingredients and mix it up
- Add water gradually and mix well. Put it into a bowl
- Take the pan outta the oven and carefully press the dough into the pan
- Bake the crust for 15 mins, then flip. Bake for another 10 minutes.
- Remove from the oven, add your toppings, and pop it back into the heat to finish cooking.
Bonus - my toppings: I made my own pizza sauce by blending the same spices, a clove of garlic, and tomatoes. Toppings were sausage, homemade labneh, and peppers.
